Homemade Beef Burgers with Ambassador Chef Jack Crosti

He makes his burgers from scratch using steak with good fat content for the meat patty with his home-made buns and home-made pickles which makes these burgers just that little bit extra special.

Ingredients you will need to make 6 burgers:

Burger Buns:

  • 500g all-purpose flour 15g sugar 15g honey 125g sourdough starter (or 65g water and 60g flour) 125g water

  • 125g milk

  • 25g butter

  • 25g olive oil

  • 12g fresh yeast

  • 12g salt

  • ¼ tsp turmeric

Home-made pickles:

  • Equal parts of rice vinegar and water

  • 50gm sugar

  • 10gm salt

  • Black pepper corns

  • Star anise

  • Coriander seeds

  • Chilli flakes

  • Cucumber slices

Meat Patties:

  • 600gm sirloin steak, finely chopped or

  • 600gm beef mince

  • Salt and pepper

Dressing:

  • Tomato sauce

  • American mustard

  • Mayonnaise

To serve:

  • Sliced tomato
